Khun Nit deserves a Nobel Prize for patience. This cooking school is a bit off the beaten path in the Mae Rim area north of Chiang Mai city. Under no circumstances should you allow that to dissuade you from spending your day with her. The cooking class is located on the PREM (PTIS) school campus, in a beautiful and peaceful location with tall trees surrounding the open air classroom. You have the choice of spending the beginning of your day with her touring the organic farm on the school campus or touring a local Thai market. Different members of our family did both of these. I strongly recommend the market option as you will have a rich experience learning about the vegetables, unique regional ingredients and food preparation customs of Thailand. We could have spent all day just at the market and not tired of Khun Nit's teaching and lore. Our daughter chose the farm tour and continues to rave about the experience now more than a week later.
Before your class you will choose your "culinary curriculum" from a long list of general and northern Thai dishes, not an easy task given the enticing options presented. We met with Nit in person once and then again revised our list based on feedback she provided after we submitted to her our proposed menu. Truly, you can not go wrong with any of the choices on the list, which includes a wide range of appetizers, main dishes and desserts.
The classroom itself is immaculate, well ventilated and well lit. The cooking utensils are clean and well maintained and easy to use. Nit provided coaching on knife skills, mortar-pestle use, flame and gas heat management. We sampled our results throughout the day, sipping on lemongrass tea while looking longingly at the majestically arranged table awaiting us for the full feast of our preparations at the end of the day. Khun Nit taught us in clear and easily understandable English, she was patient and encouraging. Her assistant kept replacing utensils for us as we progressed through each menu item, we never had to clean anything!
This cooking school welcomes children; indeed there are kids from all primary and secondary school grades at varying times during the week. Our three kids (ages 5, 9, 11) took part in several one hour classes including making banana boat pudding with us.
We thoroughly enjoyed our repast, our meal rivaled any lavish Thai restaurant I have experienced to date. We left with cookbooks, notes, plenty of left-overs, full bellies and a day of memories we will not soon forget. I have done Thai cooking classes before and this was by far the best. Nid the teacher was very knowledgeable about not only local northern thai cooking techniques and recipes (she taught us dishes her mother taught her), but has professional chefing experience as well. She is a real character, my partner and I had a great day. Lots of laughs and we felt like we had learnt a lot. Fully recommended. Also class size is small ( it was just me and my boyfriend the day we went)

We had such a fantastic time during our one-day class at the Three Generations Organic Cooking and Farming Academy and highly recommend it to anyone who loves to eat and cook.

One of the reasons for choosing this particular cooking school was that the class can be customized to suit your own wants and needs. We chose for the class to be only two of us which was great for one-on-one learning with our instructor, rather than being in a class filled with strangers like most of the other cooking schools offer.

I booked our cooking class before arriving in Thailand by emailing Nittaya (her email address is provided on the website) and she responded promptly and was very understanding of us needing to avoid certain foods that we have allergies to. She emailed us a menu of a large variety of Thai dishes, and we were able to choose six meals to cook from different categories, including: curries, salads, soups, snacks, stir-fries, drinks and desserts.

We chose the following:

DRINK - Lemongrass and Pandanus Tea
APPETIZER - Miang Khum: Thai savory bites
CURRY/SOUP - Green curry chicken
SALAD - Kana Manao Goong sod: Fresh Kale & Prawn Salad
MAIN - Moo: Steamed Pork with Red Curry in Banana Leaf Bowl
DESSERT - Pumpkin in Coconut Milk

We learned how to cook all of the dishes from scratch, and they were all unbelievably delicious.

Our instructor Ahn was extremely helpful and kind. He shared so much useful knowledge with us about traditional Thai food and cooking skills in general which we have now incorporated into our cooking back home. He also shared many stories of Thai food and culture, and was happy to answer any questions that we had about the Thai language, and the history of the country and its people. After cooking he also showed us some cute vegie and fruit carving techniques for garnishes.

We were given the choice of visiting a local market or hand-picking our own ingredients from the school's organic farm before the class began. We opted for the visit to the farm. It was visually beautiful and a wonderful experience to be harvesting our own ingredients in the early morning sunshine.

After final discussion with Nittaya via email, our schedule ended up being:

8.00am Pick up from hotel lobby
8.15am Market tour/farm
9.00am. Leaving the market/farm to cooking school
9.30am. Start cooking class
10.30am. Snack and tea break
12.30pm. Lunch
1.30pm. Finish the class, taken back to hotel

It was only 2,400 each for a cooking class of 6 dishes for two (or 2,200 per person for a class of 5 or more), which included being transported to and from our hotel in a minibus, and getting to keep the aprons we wore and a recipe booklet of all the food we had created.

It was definitely one of the top highlights of our entire 5-week trip to Thailand, and if we ever return to Chiang Mai we will be visiting the school again to learn some more dishes and spend time with the exceptionally kind staff.
A HUGE thankyou to Nittaya and Ahn - it was a wonderful day that we'll never forget.
