It wasn't that easy to find the route information, but I did the shortest route from Parking du Lutzelbach in just under an hour return though I was really blasting it as had limited time.
Once you leave Parking du Lutzelbach the castles are sign posted off to the right but you continue on and follow the next right up the hill. The path snakes up the hill with views up to this castle and also Girsberg, and across vineyards and down to the pretty town of Ribeauville.
One at the top, you can explore the castle and climb the tower for improved views, and then its only 2-3 minutes to walk across to Girsberg where you can get the excellent view back to St-Ulrich.
The scenery is great with the two castles. Very much recommended.
Mind, on a Saturday I could not find a way of driving to Parking du Lutzelbach as all routes seemed to be closed, so I ended up parking on the south side of Ribeauville and walking through Ribeauville - no bad thing as it is a scenic town with a particularly good view along the old buildings of Grand Rue to St Ulrich on the hill.

prévoir une bonne heure de marche au départ de Ribeauvillé, et n'espérez pas trop discuter en route, la pente est raide! Une fois arrivé, la vue est magnifique et les ruines nombreuses vous permettront de nombreuses photos avec en arrière-plan la plaine d'Alsace ou les montagnes des Vosges.

Il castello domina la città e, appena entrati lo noterete subito. La strada principale si farà vedere subito il castello e, percorrendola fino in fondo, avrete modo di arrivare la punto in cui comincia la salita. E' molto bello e lo consiglio

We spent 2 days in Ribeauville, France. What a beautiful area ! Surrounded by history, great food, and good people. Sadly, we didn't have enough time to visit the ruins of this castle.

tres belle ballade de celle des 3 chateaux au départ de Ribeauvillé. sentier parfois difficile mais vue magnifique. on a la possibilité de monter dans la tour du 2eme chateau mais attention au poutres qui peuvent bien vous faire mal a la tete (croyez moi ;) ) .

I read a post that said you should walk from Ribeville to the castle to visit all 3 ruins. How far in miles or kilometers is that walk? and i am assuming it is mostly steep uphill?

Try this map as it's better than google maps
opentopomap has a great map showing the paths
Park on the other side of town and enjoy the walk through twon (easier parking there too)
The walk is a little steep and perhaps muddy at times, however only reasonable shoes are needed (not city shoes) and average fitness.
About 3k each way

Yes the path is marked, easiest place to start is the place de la republique (crossroads of grand'rue and Passage Jeannelle) and then go up via the Passage Jeannelle. There are multiple routes, this is the one we took last week (marked on the return trip as Ribeauvillé par Vignobles).
